There’s no such thing as 100% safety and privacy with any VPN on the market. There’s always a certain element of trust involved and VPN’s can’t protect you from human error.
That being said - ProtonVPN is open source, independently audited and run by a company with a track record within the industry. They might also be one of very few VPN companies who’s team has full names and faces out there. That’s a lot of deciding factors to build trust, but whether you fully trust them or not is completely up to you and no one can give you any guarantees.

Trying to guess “safety” or “trustworthiness” or “not logging” is a losing game. You never can be sure, about any product or service. Even an audit or court case just establishes one data point.
So, instead DON’T trust: compartmentalize, encrypt, use defense in depth, test, verify, don’t post private stuff, maybe don’t do illegal stuff. And give fake/anon info where possible: fake name, throwaway or unique email address, pay with gift card or virtual credit card or crypto or cash.
You can use a VPN, ISP, bank, etc without having to trust them.
nothing is 100% safe but if you want to hide your traffic from like a school or abusive isp i recommend but tor is better than putting trust in one provider. Full anonmity i recommend tails os on another computer plus tor

What do you expect from a VPN service? Consumer VPN services like Proton VPN and all its competitors cannot give you any higher privacy, security or anonymity (despite some brags about their abilities).
Consumer VPN providers are essentially just a virtual Internet Service Provider. They get all your Internet traffic. They can do whatever they want with that traffic without your knowledge (except when they block the traffic; you will notice that).
The question is more: Who are you willing to entrust your Internet traffic? And why do you trust that entity more over another one?
